  • 2 lbs butternut squash, peeled and sliced into 1/4 inch rounds
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 8 fresh sage leaves, chopped
  • 1/4 tsp nutmeg
  • Salt and pepper to taste
  • 1 tbsp butter (for greasing)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with butter.
  2. Layer half of the butternut squash in the dish. In a bowl, mix heavy cream, Parmesan cheese, garlic, sage, nutmeg, salt, and pepper.
  3. Pour half of the cream mixture over the squash layer. Add remaining squash on top and pour the rest of the cream mixture over it.
  4. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 20-30 minutes until golden brown.
  5. Let rest for 10 minutes before serving.
