  • 9 no-boil lasagna noodles
  • 1 cup whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 8 fresh sage leaves
  • 1 cup low-sodium vegetable broth
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the butternut squash in half, scoop out seeds, drizzle with olive oil, salt, and pepper. Roast for about 30 minutes until tender.
  2. In a skillet over medium heat, sauté minced garlic and sage in olive oil until fragrant (about 2 minutes).
  3. In a bowl, combine ricotta cheese with half of the Parmesan cheese, salt, and pepper until smooth.
  4. In a baking dish, spread a layer of vegetable broth on the bottom. Layer noodles followed by mashed squash, ricotta mixture, mozzarella slices, and repeat until all ingredients are used.
  5. Cover with foil and bake for 30 minutes. Remove foil, sprinkle remaining mozzarella on top, and bake uncovered for another 15 minutes until golden brown.
