  • 1 lb pizza dough (store-bought or homemade)
  • 1 cup butternut squash puree (about 1 medium squash)
  • 6 oz spicy chorizo (sliced)
  • 2 cups fresh baby spinach
  • 2 tbsp extra virgin olive oil
  • 1 cup mozzarella cheese (shredded)
  • ½ cup goat cheese (crumbled)

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the butternut squash in half, scoop out the seeds, and roast cut side down on a baking sheet for 30-40 minutes until tender.
  2. In a skillet over medium heat, cook sliced chorizo until browned and crispy. Add fresh spinach and sauté until wilted, about 2-3 minutes.
  3. Scoop the roasted squash into a bowl, mash with olive oil, salt, and pepper until smooth.
  4. Roll out the pizza dough into your desired shape. Spread the squash puree over the base, then layer with sautéed chorizo and spinach.
  5. Top with mozzarella and goat cheese. Bake for 15-20 minutes until golden brown.
  6. Drizzle with extra olive oil if desired, slice, and serve hot.
