Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour and baking soda. Gradually add to the wet mixture until just combined.
  5. Scoop dough using a tablespoon; flatten slightly and add about one teaspoon of Biscoff spread in the center before folding the dough around it.
  6. Place on prepared sheets, spaced 2 inches apart. Bake for 10-12 minutes until golden brown on edges but soft in the center.
  7. Allow to cool for about 5 minutes before transferring to wire racks.
