  • 3 lbs chuck roast
  • 4 dried guajillo chiles
  • 2 tsp cumin seeds
  • 1 large onion
  • 1 cup fresh cilantro
  • 4 cups low-sodium beef broth
  • Juice of 2 limes

Instructions

  1. Remove stems and seeds from guajillo chiles; toast in a dry skillet over medium heat for 2 minutes.
  2. Blend toasted chiles, cumin, onion, garlic (to taste), and 2 cups of beef broth until smooth.
  3. Marinate the chuck roast in the blended marinade for at least 2 hours (or overnight) in the refrigerator.
  4. Cook the marinated roast with remaining marinade and another cup of beef broth in a pot over medium heat for about 3 hours until tender.
  5. Shred the meat using two forks and strain the cooking liquid.
  6. Dip corn tortillas into the strained broth, fill with shredded beef, and top with cilantro and onions before serving.
