Beetroot-Infused Shepherd’s Pie Bites are a delightful twist on a classic dish, combining earthy beets with savory ground meat and creamy mashed potatoes.   • 1 cup fresh beetroot, peeled and diced
  • 1 lb ground lamb or beef
  • 1 medium onion, finely chopped
  • 1 cup carrots, diced
  • 2 cloves garlic, minced
  • 1 cup low-sodium vegetable stock
  • 2 cups mashed potatoes (prepared with butter and cream)
  • 1 cup grated sharp cheddar cheese
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Cook the diced beetroot in boiling salted water for about 20 minutes until tender. Drain and set aside.
  2. In a skillet over medium heat, sauté onion, garlic, and carrots in olive oil until soft (about 5 minutes). Add ground meat and cook until browned.
  3. Stir in seasonings and vegetable stock; let simmer for 10 minutes.
  4. Mash the cooked beetroot until smooth. Combine with a portion of the prepared mashed potatoes.
  5. Preheat oven to 375°F (190°C). Assemble by layering meat mixture in greased muffin tins, topping with beet-infused mashed potatoes, then sprinkling cheese on top.
  6. Bake for 25–30 minutes until golden brown.
