  • 8 oz penne pasta
  • 8 oz high-quality block feta cheese
  • 2 cups ripe cherry tomatoes
  • 3 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1 tsp red pepper flakes
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In the baking dish, combine cherry tomatoes, drizzle with olive oil, season with salt and pepper, then place the block of feta in the center.
  3. Sprinkle minced garlic and red pepper flakes over the ingredients.
  4. Bake for about 30 minutes until the tomatoes are blistered and the feta is melting.
