  • 9 no-boil lasagna noodles
  • 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
  • 2 cups whole milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 large eggs (room temperature)
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh oregano, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 3 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté asparagus and garlic until bright green and fragrant.
  3. In a bowl, mix ricotta cheese, eggs, Parmesan cheese, basil, oregano, salt, and pepper until smooth.
  4. In a baking dish, spread a thin layer of marinara sauce. Layer with noodles, half the ricotta mixture, sautéed asparagus, and mozzarella. Repeat layers ending with noodles topped with marinara and mozzarella.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until bubbly.
  6. Let rest for 10-15 minutes before slicing.
