Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a bowl, mix the red velvet cake mix, eggs, and vegetable oil until just combined.
  3. Pour the batter into the muffin tins, filling each about two-thirds full. Bake for 15-18 minutes or until a toothpick comes out clean.
  4. While cooling, beat cream cheese with powdered sugar and vanilla until smooth.
