Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter and half of the cinnamon sugar. Press firmly into the bottom of a greased springform pan.
  2. Beat cream cheese and remaining sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing well after each addition.
  3. Pour filling over the crust and smooth out any lumps. Bake for 50-60 minutes until set but slightly jiggly in the center.
  4. Turn off the oven, crack the door open, and let cool for an hour to prevent cracks on top.
  5. Sprinkle remaining cinnamon sugar on top before serving.
