  • 1 cup heavy cream
  • 1/2 cup shelled pistachios (finely chopped)
  • 1/3 cup granulated sugar
  • 1/2 cup espresso or strong coffee (cooled)
  • 12 ladyfinger cookies

Instructions

  1. Let the mascarpone cheese sit at room temperature for about 15 minutes and brew espresso to cool.
  2. In a large bowl, whip heavy cream until soft peaks form (about 3–5 minutes).
  3. In another bowl, combine softened mascarpone with granulated sugar; gently fold in whipped cream until blended but fluffy.
  4. Mix in finely chopped pistachios, saving some for garnish.
  5. Dip ladyfinger cookies briefly in cooled espresso and layer them in a serving dish. Spread half of the mascarpone mixture over them.
  6. Repeat with another layer of dipped ladyfingers followed by the remaining mascarpone mixture on top. Cover tightly and refrigerate for at least four hours or overnight.
  7. Before serving, sprinkle extra crushed pistachios on top.
