- 2 cups heavy cream
- 1/2 cup granulated sugar
- 2 sheets gelatin (or 1 tsp gelatin powder)
- 1 cup whole milk (or almond/coconut milk)
- 1 tsp pure rosewater
- 1 cup cherries (fresh or frozen)
- 1 tbsp lemon juice
- Soak gelatin in cold water for 5 minutes. For powder, sprinkle over cold milk.
- In a saucepan, heat heavy cream and sugar over medium until sugar dissolves (3-5 minutes).
- Remove from heat, squeeze excess water from gelatin, and whisk into the warm cream until dissolved. Stir in rosewater.
- Pour into serving cups and tap to release air bubbles. Cover and chill for at least 4 hours or overnight.
- Prepare cherry compote by simmering cherries with sugar and lemon juice until thickened (10-15 minutes). Let cool before topping the panna cotta.
