  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface to about ¼ inch thick and transfer it to a parchment-lined baking sheet.
  2. In a skillet over medium heat, melt butter. Add sliced pears and sprinkle brown sugar. Cook until pears are caramelized, about 5-7 minutes, gently turning to coat.
  3. Stir in rosemary until fragrant, then remove from heat.
  4. Spread Brie slices over the pastry, leaving an edge. Layer caramelized pears on top.
