  • 1 cup ricotta cheese (whole milk recommended)
  • 2 cups fresh spinach (washed and chopped)
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs (organic preferred)
  • 2 tablespoons fresh basil (chopped)
  • 2 tablespoons fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Roll out the pie crust into a 9-inch pie dish, pressing gently to avoid tears.
  2. In a skillet over medium heat, add a splash of olive oil and sauté the fresh spinach until wilted but still bright green. Allow it to cool slightly.
  3. In a large bowl, combine ricotta cheese, sautéed spinach, grated Parmesan cheese, eggs, chopped herbs, salt, and pepper. Stir until well mixed.
