  • 1 cup full-fat coconut milk
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 2 fresh chili peppers, chopped (adjust as desired)
  • 4 cloves garlic, minced
  • 2 tbsp brown sugar
  • 3 tbsp low-sodium soy sauce

Instructions

  1. In a bowl, mix coconut milk, lime juice, minced garlic, brown sugar, soy sauce, and chopped chili peppers. Add chicken breasts, cover, and marinate for at least one hour or overnight.
  2. Preheat your grill to medium-high heat (400°F/200°C) or heat a nonstick skillet over medium heat.
  3. Remove chicken from marinade (reserve marinade). Grill or sauté for about 6-7 minutes on each side until cooked through (165°F/75°C).
  4. In a saucepan, bring reserved marinade to a boil over medium heat; reduce heat and simmer for about 5 minutes until slightly thickened.
  5. Brush some sauce over the chicken during the last minute of cooking for added flavor.
  6. Serve chicken drizzled with remaining sauce and garnish with fresh cilantro or lime wedges.
