  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 14.5 oz canned fire-roasted tomatoes
  • 1 cup long-grain rice
  • 2 tsp Cajun seasoning
  • 3 cups low-sodium chicken broth
  • 2 green onions (sliced for garnish)
  • 2 tbsp fresh parsley (chopped for garnish)

Instructions

  1. Prep your ingredients by chopping the chicken thighs, bell peppers, onion, and mincing the garlic.
  2. In a large pot over medium heat, add oil and sauté the sliced sausage until browned. Then, add the chicken pieces and cook until golden brown.
