  • 3 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup breadcrumbs

  • 2 tsp Italian seasoning

  • ½ tsp black pepper (to taste)
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, minced garlic, Parmesan cheese, breadcrumbs, eggs, Italian seasoning, salt, pepper, and olive oil. Mix until just combined to prevent dense meatloaves.
  3. Divide the mixture into four equal portions and shape them into mini loaves on the prepared baking sheet.
  4. Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  5. Allow the meatloaves to rest for 5 minutes before serving. Optionally drizzle with olive oil or sprinkle with additional Parmesan before serving.
