Salmon en Pappillote

  • 2 salmon fillets (6 oz each)
  • 2 sheets of parchment paper (12x16 inches)
  • 1 cup assorted seasonal vegetables (bell peppers, zucchini, etc.), sliced
  • 2 tablespoons fresh herbs (dill or parsley), chopped
  • 1 lemon, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut two large pieces of parchment paper into heart shapes and fold them in half.
  3. On one side of each parchment heart, place one salmon fillet. Top with sliced vegetables, lemon slices, and fresh herbs. Drizzle with olive oil and season with salt and pepper.
  4. Fold the other half of the parchment over the salmon and crimp the edges tightly to seal.
  5. Place pouches on a baking sheet and bake for 15-20 minutes until salmon flakes easily with a fork.
  6. Carefully unwrap at the table to serve.
