  • ¾ cup granulated sugar
  • 3 large eggs, room temperature

  • Zest of 1 lemon
  • 2 tbsp fresh herbs (basil or thyme), chopped
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix crushed graham crackers and melted butter. Press into the bottom of a springform pan.
  2. Bake the crust for about 10 minutes until golden. Let it cool.
  3. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream, lemon juice, lemon zest, and vanilla.
  4. Beat in eggs one at a time until just combined; fold in fresh herbs.
  5. Pour filling over the crust and bake for 50-60 minutes until edges are set but center is slightly jiggly.
  6. Turn off the oven and let the cheesecake cool inside with the door ajar to prevent cracking.
