Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken with salt and pepper. In a skillet, melt butter over medium heat. Add chicken and sear for about 6-7 minutes per side until golden brown. Remove from heat and chop into bite-sized pieces.
  3. In the same skillet, sauté onions for 3-4 minutes until translucent. Add carrots, peas, potatoes, garlic powder, and thyme; stir well.

  5. Transfer mixture to the baking dish; cover with puff pastry and seal edges. Cut slits for steam escape and brush with melted butter.
