  • 1/4 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1 can (13.5 oz) coconut cream, chilled
  • Juice and zest of 2 fresh lemons
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine almond flour and melted coconut oil until crumbly. Press into the bottom of the prepared dish.
  3. Bake the crust for about 10 minutes until lightly golden.
  4. In another bowl, whisk together chilled coconut cream, maple syrup, lemon juice, lemon zest, cornstarch, and vanilla extract until smooth.
  5. Pour the filling over the baked crust and return to the oven. Bake for 20-25 minutes until set but slightly jiggly in the center.
  6. Allow cooling before slicing into bars.
