  • 2 hard-boiled eggs, chopped
  • 1 avocado, diced
  • ½ cup blue cheese crumbles
  • 3 tablespoons balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey

  3. Boil the eggs by placing them in cold water, bringing to a gentle boil, then simmering for 10 minutes. Cool in cold water before peeling and chopping.
  4. Dice the romaine lettuce and halve the cherry tomatoes. Slice the avocado just before serving.
  5. For the dressing, whisk together balsamic vinegar, olive oil, Dijon mustard, honey, salt, and pepper until smooth.
  6. In a large bowl or platter, layer the romaine first, followed by tomatoes, bacon bits, eggs, avocado slices, and blue cheese crumbles. Drizzle with dressing before serving.
