  • 2 tbsp extra virgin olive oil

  • 1 tsp dried rosemary
  • 2 tbsp butter or vegan alternative

Instructions

  1. Prepare your ingredients by washing and chopping all vegetables.
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent; add carrots and garlic.
  3. Stir in lentils and vegetable broth. Bring to a boil, then simmer until lentils are tender (20–25 minutes).
  4. Add frozen peas, thyme, and rosemary; cook for another 5 minutes.
  5. While the filling simmers, boil potatoes until tender. Drain and mash with butter; season with salt.
  6. Preheat oven to 400°F (200°C). Spread the lentil mixture in a baking dish and top with mashed potatoes.
  7. Bake for 25–30 minutes until golden brown.
