  • 1/4 cup fresh basil, chopped

  1. Wash and chop the aubergine, zucchini, bell peppers, tomatoes, onion, and garlic into uniform bite-sized pieces.
  2. In a large pot over medium heat, warm the olive oil. Add chopped onions and cook until translucent. Stir in minced garlic until fragrant.
  3. Toss in the diced aubergine, zucchini, and bell peppers. Cook for about 5-7 minutes until slightly softened.
  4. Mix in the chopped tomatoes along with salt and pepper. Simmer gently for about 10 minutes to meld flavors.
  5. Stir in the freshly chopped basil and thyme. Cook together for another 5 minutes before serving hot.
