  • 1 lb chicken thighs, boneless and skinless, diced
  • 1 cup bell peppers (mixed red and green), chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup long grain rice
  • 14.5 oz canned diced tomatoes with juices
  • 2 tsp Cajun seasoning
  • 3 cups chicken broth

Instructions

  1. In a large pot over medium heat, sauté the diced Andouille sausage and chicken thighs until browned (5-7 minutes). Remove from pot and set aside.
  2. Add chopped bell peppers, onion, and minced garlic to the same pot; cook until softened (3-4 minutes).
  3. Stir in long grain rice until coated with oil.
  4. Return sausage and chicken to the pot; mix in canned tomatoes and Cajun seasoning.
  5. Pour in chicken broth; bring to a simmer while scraping any bits from the bottom of the pot.
  6. Cover and reduce heat to low; let simmer for 20-25 minutes or until rice is tender. Stir halfway through.
