  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, chopped
  • 1/2 cup fresh cilantro, chopped
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp cumin powder
  • 1 avocado, sliced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. Combine with 2 cups water or broth in a saucepan; bring to a boil.
  2. Reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed. Fluff with a fork.
  3. While quinoa cooks, chop red bell pepper and halve cherry tomatoes.
  4. In a large bowl, mix cooked quinoa with black beans, veggies, cilantro, lime juice, cumin powder, salt, and pepper.
  5. Serve in bowls topped with avocado slices and additional cilantro for garnish.
