  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 medium sweet onion, diced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes); add garlic and sauté for another minute.
  3. Stir in spinach until wilted (3-4 minutes). Remove from heat.
  4. In a bowl, mix ricotta, feta, eggs, dill, lemon juice, salt, and pepper until smooth.
  5. Cook pasta according to package instructions until al dente; drain and reserve some pasta water.
  6. Combine cooked pasta with spinach mixture and cheese filling in a bowl; add reserved pasta water if needed for creaminess.
  7. Transfer to a greased baking dish and bake uncovered for 25-30 minutes until golden brown.
