  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 cups fresh raspberries
  • 2 tbsp sugar (for raspberry swirl)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish by greasing it or lining it with parchment paper.
  2. Melt the butter in a saucepan over low heat. Stir in granulated sugar and brown sugar until fully combined. Remove from heat and let cool slightly.
  3. Whisk in eggs one at a time, followed by vanilla extract until smooth.
  4. In a separate bowl, whisk together cocoa powder, flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. In another bowl, mash the raspberries with 2 tablespoons of sugar until juicy but chunky.
  6. Pour half of the brownie batter into the prepared dish. Spoon dollops of the raspberry mixture on top, then add the remaining brownie batter. Use a knife to create swirls.
  7. Bake for 25-30 minutes or until a toothpick comes out mostly clean with some crumbs sticking.
