Ingredients

Scale
  • 1 medium butternut squash (about 2 pounds)
  • 8 cloves fresh garlic
  • 8 ounces fettuccine or penne pasta
  • 1 cup heavy cream or 1 cup coconut milk (for dairy-free)
  • 2 tablespoons extra virgin olive oil
  • ½ cup freshly grated Parmesan cheese (plus more for garnish)
  • Salt and pepper to taste
  • 2 tablespoons fresh herbs (sage or thyme)

Instructions

  1. Preheat oven to 400°F (200°C). Halve butternut squash, scoop out seeds, drizzle with olive oil, and sprinkle with salt. Wrap garlic cloves in foil with olive oil. Roast both for about 30-35 minutes until tender.
  2. While roasting, boil salted water in a large pot. Cook pasta according to package instructions until al dente, reserving some pasta water before draining.
  3. In a blender, combine roasted squash, garlic, cream (or alternative), Parmesan cheese, salt, pepper, and herbs. Blend until smooth, adding reserved pasta water as needed for consistency.
  4. In a large skillet over medium heat, mix cooked pasta with the creamy sauce until well-coated (about 1-2 minutes).
  5. Serve warm with additional Parmesan and fresh herbs on top.
