  • 1 medium Onion (about 150g), diced
  • 2 cloves Garlic, minced
  • 4 cups Low-Sodium Vegetable Broth (960ml)
  • 1 cup Coconut Cream (240ml)
  • 1 cup Fresh Spinach (30g)
  • Salt and Pepper to taste

Instructions

  1. Prepare your ingredients by washing and peeling the potatoes, then dicing them along with the onion and garlic.
  2. In a large pot, heat a splash of olive oil over medium heat. Sauté the onion until translucent (about 5 minutes), then add minced garlic until fragrant.

  4. Blend the soup until smooth using an immersion blender or regular blender.
  5. Return to low heat, stir in coconut cream, and season with salt and pepper to taste.
