Instructions

  1. In a medium saucepan over medium heat, combine coconut milk, sugar, and salt. Stir until heated but not boiling.
  2. In a separate bowl, whisk cornstarch with 2 tbsp coconut milk until smooth. Gradually add to the saucepan; cook for about 5 minutes or until thickened.
  3. Remove from heat and stir in mashed bananas and vanilla extract until well combined.
  4. Pour into serving dishes and cover with plastic wrap directly on the surface to prevent skin formation. Refrigerate for at least 4 hours until set.
