  • 8 manicotti pasta tubes
  • 4 boneless skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Sauté seasoned chicken breasts in oil until golden brown, about 6-7 minutes per side. Cool, then shred into bite-sized pieces.
  3. In a bowl, mix ricotta, shredded chicken, minced garlic, half the mozzarella, salt, and pepper.
  4. Stuff each manicotti tube with the filling and arrange in the baking dish.
  5. In a saucepan over medium heat, combine heavy cream with remaining mozzarella and Parmesan until smooth.
  6. Pour half of the Alfredo sauce over the stuffed manicotti. Cover with foil and bake for 25 minutes. Remove foil, drizzle remaining sauce on top, sprinkle more mozzarella, and bake uncovered for an additional 10-15 minutes until bubbly.
