  • 2 tbsp olive oil (for topping)

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Boil cubed butternut squash in salted water for 8-10 minutes until fork-tender. Drain.
  3. In a large bowl, mix heavy cream, garlic, thyme, salt, and pepper. Add cooked squash and toss to coat.
  4. Layer half of the mixture in the baking dish. Top with half of the cheese. Repeat layers.
  5. Combine breadcrumbs with olive oil and sprinkle on top. Bake for 25-30 minutes until golden brown.
