  • 4 cups fresh kale, chopped
  • 1 large sweet onion, finely chopped
  • 2 medium carrots, diced
  • 4 cups low-sodium chicken broth
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant and golden brown (about 2-3 minutes).
  2. Add diced carrots and sauté for another 5 minutes until they soften.
  3. Place chicken breasts in the pot and sear on both sides until lightly browned (4-5 minutes per side).
  4. Pour in drained white beans and chicken broth; bring to a gentle simmer while scraping up any bits from the bottom.
  5. Stir in kale, thyme, bay leaves, salt, and pepper. Simmer for about 20-25 minutes until chicken is cooked through.
  6. Remove chicken from the pot, shred it with two forks, and return it to the stew. Mix well before serving.
