  • 1 smoked ham hock (about 1 lb)

  • 1 tsp dried thyme
  • 2 bay leaves

Instructions

  1. Soak the navy beans overnight in plenty of water.
  2. In a skillet over medium heat, sauté onions, carrots, celery, and garlic until tender (about 5 minutes).
  3. Combine soaked beans, sautéed vegetables, ham hock, chicken broth, thyme, and bay leaves in your crockpot. Stir well.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Once cooked, remove the ham hock; shred any meat back into the soup and discard bay leaves.
  6. Serve hot with crusty bread or cornbread.
