  • 1 pound dry-packed scallops
  • 2 ears corn on the cob, cut into thirds
  • 1 pound small red potatoes, halved
  • 2 bell peppers (any color), cut into chunks
  • 1 medium zucchini, sliced thickly
  • 3 tablespoons olive oil
  • 2 tablespoons Old Bay seasoning

Instructions

  1. Prepare ingredients by washing all vegetables and cutting corn and potatoes.
  2. Parboil halved red potatoes in boiling water for 5 minutes; drain and let cool.
  3. Assemble the skewers by alternating shrimp, scallops, corn, potatoes, bell peppers, and zucchini.
  4. Mix olive oil with Old Bay seasoning and brush it over the skewers.
  5. Preheat grill to medium-high heat (400°F / 200°C).
